The chefs are working on a new dish… It is made with fermented red cabbage, crispy potato, fermented chili oil and chives mayonnaise. The flavours are on point! But they are still contemplating about what their little piece of art should like when you eat it..

Don’t miss out on this new dish!

From next week we will serve smoked carrots with a curry madras sauce, a cream of sunflower seeds, crispy sunflower seeds, coriander and lime zeste.

We pair it with a bio-dynamic wine from the Roussillon which is made from Muscat d’Alexandrie, Muscat Petit Grain and Viognier. The grapes had 24 hours of maceration and cooled fermentation, which results in a beautiful pure, juicy and fresh wine with hints of flowers, apricots and some grapefruit.
